

3 large bananas, mashed
1/2 stick of butter, melted
1 t vanilla
1 egg
90g brown sugar
180g whole wheat + cake flour
2 t ground cinnamon
1 t baking powder
1 t baking soda
3/4 C toasted walnuts, chopped
Combine mashed bananas, egg, butter, vanilla and sugar. Sift dry ingredients. Pour the wet mixture over the dry ingredients and mix to combine. Fold in walnuts and bake at 375F for 35 min.

Sounds so simple and good- a great brunch item.
